Taste and Liquor Birmingham Burger Month asks: ever had an Indian Pav Slider or an Indian Sloppy Jo? No, then get stuck into the original taste of Mumbai at Moseley’s much loved street-food eatery Zindiya Streatery and Bar.
The story of the burger in India is not just about what’s in between two pieces of bread. It’s also a story of how a greasy snack on the street corner turned into an aspirational meal for so many urban Indians. Zindiya Streatery and Bar will be flying the South Indian flag for Taste and Liquor Birmingham Burger Month as they present India’s much loved Burger The Vada Pav.
The Vada Pav, which was actually created for textile mill workers in 1966 in Mumbai; these individuals had a lot to do and needed a quick meal to keep them going, which this food was able to satisfy. It has been a long time since then, but the meal now holds a special place in the hearts of many Indians across the world.
The Vada Pav is similar to a burger; essentially a Plump Ball of Deep-Fried Vegan Patties are made using a blend of Mashed Potatoes, Masala Spices, Green Chili, and some chopped Onions. Patties are formed, then dipped in a chickpea flour batter before frying and served in a buttered bun.
Through October – and beyond, Zindiya Streatery and Bar offerings for Taste and Liquor Birmingham Burger Month are The Vada Pav Burger (Potato, Chickpea flour and Hot, Tangy and Sweet Chutneys), The Pav Bhaji Burger (Spicy Mixed Vegetables), The Soya Pav Burger (Spicy Soya in Spices) and Indian’s version of a Sloppy Jo, Keema Pav (Minced Spice Lamb, Coriander, Cumin Masala and Tomato).
Zindiya is an Indian Streatery and Bar created by husband and wife team, Ajay & Shivani Kenth, who have planned this venture since their teenage years. Their concept was to create an immersive experience of India – drinking chai or Limca, eating chaat and gol gappe – in a casual and fun environment.
The experience of the street markets of Indian cities such as Delhi, Mumbai and Kolkata are like nothing on earth. Their exotic and bustling aura is unique and Zindiya wanted to bring a sense of that culture to the place they were born, Moseley.
