Taste and Liquor’s solid regular knows a lot about the best way to marry meat and smoke. Known as Midlands’s foremost smoking expert, barbecuing is his way of life. Allow us to introduce you to our next chef, Little Urban BBQ, a raising trailblazing street food star!
Honestly, it’s hard to imagine how much better this Saturday’s The Great British BBQ, Meat and Gin Festival could get. But it’s just been elevated to the next level!
Anyone driving along Upper Trinity St in Digbeth, with the windows down will passed through a stream of fragrant smoke that will make the mouth water; you’ll have our next street-food guest to thank for that as the Little Urban BBQ will be parking-up his converted horse-box – which is now made in a fully functional BBQ smoker – to bring on da BBQ with this stunning – fall of the bone – menu.
We pride ourselves to encourage all our chef guests to deliver new and exciting dishes at our festivals and for sure this Saturday will not disappoint!
His new and exclusive dish of moist Baby Back Bun – 1/3 rack of (deboned) baby back ribs, smoked until meltingly tender and glazed in a Hot and Sweet BBQ sauce, served with tangy slaw, pickles and mayo on a buttermilk bun – will be the star of his menu: with just the right amount of rendered fat and meat that’s been baptised in perfect levels of smoke. A lot of street-food spots end up over-smoking, but we were pleased to tell you that’s not the case as this trader has got his smoke on point. But wait, there’s more.
Pick up a Moink Roll – Meatballs, wrapped in bacon, glazed in BBQ sauce, with bourbon braised onions (yes, we said bourbon), cheese, pickles and American mustard in an artisan roll – who doesn’t like a meatballs, but have you ever try them at a BBQ? For us this hits its mark.
Eager to try more meats, Little Urban BBQ continues to delight with his own Smoked Brisket Bun with pickles-vinegar slaw and 20hr Cherry Smoked Brisket. The brisket will be so juicy and tender, and hit with Little Urban BBQ’s homemade sauce for some added zing.
Finished this meaty-menu with some apple smoked St. Louis Ribs, taken right from under the belly – just the way we like it, alongside Vegan Jackfruit Carnitas with scotch bonnet-mango sauce and vegan mayo.
Blame it on the lure of smoke hanging heavy in the air or the primal attraction of meat, but Taste and Liquor’s third annual BBQ, Meat and Gin Festival breeds allegiance.
