Having launched many street-food traders first to the scene we are super-excited to be introducing authentic Mexican Food to our line-up. We warmly welcome Chalupa Mexican Food to our collective. This unique vendor will be presenting Tacos al pastor at Kebabingham on Saturday 2nd March, at Mutt Motorcycles in Digbeth.
We love the energy and passion from Head Chef Jorge Rendón Riba whose mission it is to show real Mexican food street food, made by a passionate Mexican chef. There won’t be none of this Tex-Mex stuff as his dishes are next level – as pictured – and we can’t wait to share his full menu in the next coming weeks, but first let’s discover more about the history of his menu, Tacos al pastor.
We know Tacos al pastor come from Mexico? But as we dive deep into its origins we discover the method of cooking “al pastor” actually comes from Lebanon. It’s inspired by shawarma! Tacos al pastor were created in the 1930s in Puebla, Mexico, by Lebanese immigrants who introduced the region to classic shawarma: roast lamb roast served on a flour tortilla or pita bread (pan árabe). This creation was originally known as tacos árabes, and used meat cooked on a vertical, or upright, grill.
As the English translation of al pastor is “in the style of the shepherd.” Mexican shepherds adapted the Lebanese style of spit-roasting lamb, using pork instead, and al pastor tacos became a beloved Mexican food the world over.
